Sharpness-on, Interlace-off

Okay - could someone please explain to me why we have to turn the sharpness on, and the interlace off for the CV-10s and CV-7s if we're displaying video on them, and switching between multiple inputs? There hasn't been a single touch panel that we've installed that displays video and we must force it to look like absolute junk. We're switching out some 6 year old Elan Via!s that look *much* better than a CV-7/10 with the sharpness on/interlace off. This problem only seems to be on the CV7 and CV10. Does anyone know if it's on all the panels?
For the amount that these panels cost - this *should not* be a problem.
Any other solutions?
