I love Sitar. Sitar/Guitars combos like the Beatles and McLaughlin lead to interesting east meets west Fusion !!
I think quite a bit depends upon the way a Sitar is played, fret hit, big bends, sustain
First attempt would be to use strings that can be bent a lot and to try and down tune the guitar a few steps to get that fret noise at the begining of a Sitar pluck
Also reduce the treble end as Sitar notes are not shrill.
PS : I did see a guitarist do a reasonable Sitar impression on an ES type guitar, he had a Roland Synth

You'd have to have a heavy gate on it, and probably a phase effect. Pluck at the bridge, as close to it as you can get.
Another tone that would be similar is using the IPS Whammy set for 1 Oct Down with Pedal=99; then Mod Pitch with Shift=+12 (to bring it back up to pitch).
You'd also have to play with the amp model - you can get into all sorts of nonsense there. Generally, I find it useful to add a SparkleDrive stompbox sometimes, too, with Clean setting on high (something like 80) and relatively low gain - just to give it some character.
I don't know if there is a way to do this with GNX, but a sitar can be simulated with heavy reverb set to 100% wet and slow chorus. I would also use one of the acoustic patches.
Plus, as Websurf said, style is very important. Bending and vibrato are key to getting that slightly off-key sound that is common with sitar playing. I think the strings do have to be very slack to get that thwacking sound.
The Dan Donegon Digitech pedal has a sitar setting, maybe you could look into the specs of that pedal.

WOG, if you get something, please post it--I'd be interested to see what you come up with. Plus, other people could use yours as a starting point and make their own modifications. Working together, we should be able to get somewhere that's at least eight and a half times as far as where we are now.
And you're right, it's easy to get lost when tweaking!

I messed w/ it for a couple hours and I posted what I came up with--I can't leave a sound bite right now since I need a mp3 converter---my ptp isn't workin now----another day --I'm fried
